The Chef's Choice 1520 has 3 phases: Phase 1 is equipped with 100 percent diamond cutting discs and grinds all your knives with a 15 degreeut. Stage 2 also features the same cutting discs and grinds all your knives with a 20 degreeut. Stage three polishes both Japanese and European knives, creating the razor-sharp cut Chef's Choice is known for. All your knives are sharpened at exactly 15 or 20 degrees. The precisely shaped grinding and polishing discs guarantee that your cut will not be damaged.
